Ful Mudammas - Vegetarian Middle-Eastern Bean dish







Bean dish

This is a delicious middle eastern dish which is not only healthy, but absolutely tasty

Ingredients:

2 Tins of chick peas, unflavoured and drained
1 Tin of butter beans, drained
1 Tin of Cannelini beans, drained
2 Big cloves of garlic, crushed
10 g of Parseley, finely chopped (half a bush of parseley or 1 cup when chopped)
10 g Garden mint, finely chopped (1 cup of leaves measured before being chopped)
6 Spring onions, finely chopped
Juice of 2 lemons
100 ml Good quality olive oil
2 t salt

Method:

Drain all 4 cans of beans in a collander and rinse through once with clean water
Place beans in a big pot and add ½ tin of boiling water
Add:
Garlic, salt and lemon juice and bring to the boil
Simmer for about 8 minutes while stirring continously
Remove from heat and mash the beans with a metal masher until about one third is mashed
Now stir in the parseley, mint and spring onions and stir through
Place bean mixture in a serving dish and pour over olive oil 
Serve piping hot


Bone gereg

Hierdie is ‘n heerlike gereg wat jy kan gebruik vir ‘n voorgereg of as hoofgereg. Bedien met warm bros ciabatta-brood en vars ongegeurde jogurt

Bestandele:

2 Blikke Kekerertjies / Chick Peas gedreineer
1 Blik Botterbone, gedreineer
1 Blik Cannelini Bone, gedreineer
2 Groot knoffelhuisies fyngemaak
10g Pietersielie, skoongespoel en fyngesnipper (‘n halwe groot bossie pietersielie)
10g Kruisement, skoongespoel en fyngesnipper (‘n koppie blare, ongesnipper afgemeet)
6 Sprietuie (spring onions), fyngekap
Sap van 2 Suurlemoene
100ml Goeie kwaliteit Olyfolie
2 t sout

Metode:

Dreineer al 4 blikke bone in ‘n vergiettes en spoel een maal deur met skoon water
Plaas bone in ‘n groot kastrol en voeg ½ blik kookwater by
Voeg by:
Knoffel, sout, en suurlemoensap en bring tot kookpunt
Prut vir ongeveer 8 minute en roer deurgaans
Verwyder van die hitte en neem ‘n aartappel drukker en druk die bone effens sodat ongeveer ‘n derde fyngemaak is
Roer nou die pietersielie, kruisement en sprietuie by.
Sit die bone-mengsel in ‘n opdienbak en giet die vars olyfolie bo-oor
Geniet kokend warm
